It is far easier to hide flaws behind a multitude of ingredients and complex sauces than it is to present a single, perfectly cooked piece of fish. Simplicity is terrifying because it leaves nowhere to hide.
At Nouvelle Côte, we embrace this vulnerability. We believe that true culinary artistry lies in restraint. When you have a tomato that has been ripened by the Mediterranean sun, adding twenty other components to the plate is a disservice to the farmer and to the ingredient itself.
Simplicity demands perfection. The technique must be flawless, the seasoning exact. It is a philosophy that requires supreme confidence and a deep respect for the raw materials we are privileged to work with.
